Spicy Rice With Peas (Pantry Recipe)

This is easy, fast, cheap, and uses ingredients most people have in their pantry and freezer. I used to eat buttered rice and peas all the time back in college and it's not only comforting, easy, and good leftover, but the rice and peas make a complete protein. Either 3 small meals or 2 medium-sized meals) In a pot you use to cook rice (something heavy-bottomed with a lid, or just use a rice cooker if you have one), turn on the heat to medium and add: -2 TBS fat (I used ghee, but you can use butter, vegetable oil, leftover roast drippings, whatever you have.) -1 cup raw white rice (the only white rice this doesn't work so well with are short grain varieties.) Stir the rice constantly in the fat for a couple minutes. Then add: -2-3 tsp spices to taste (I used: 1/4 tsp chili powder, 1/2 tsp coriander, 1/2 tsp cumin, 1 tsp turmeric, 1/2 tsp black pepper) -Salt to taste (I used 1 tsp. Use less if you're using canned broth instead of water. You can always add more salt later when you eat it.) Cook your rice and spices in the fat, stirring constantly, until the half the rice kernels are opaque. This should take a few minutes. Then add: -1 1/2 cups water (or broth, if you have it) Stir briefly, cover, lower the heat to low, and cook for 20 minutes. After the 20 minutes are up, turn off the heat, fluff the rice with a fork, then cover again and let the rice sit in the pot for 5 minutes. During this time, pour 1 cup frozen peas into a cereal bowl, cover with a saucer, and microwave for a couple minutes or until warmed through. Serve the rice with the peas.
